Cooking Chicken in Coconut Oil?

I make a mean mahi-mahi in coconut milk. I fry up the mahi-mahi first, then simmer it in the coconut for a while. I hope this helps.

I have decided maybe in protein shakes or concoctions of my own making with protein powder (desserts) would be nice. It truely have a coconut flavour right? — Low-Carb since 1/7/02 147/120/70kgs 324/264/150lbs Next major mini goal 250 * * * * * * I got all excited when I finally found extra virgin coconut oil (coconut butter) on a shelf, and bought it immediately remembering a while back when everyone raved about how great it was as a fat source etc etc etc… I was sadly dissapointed when I made up a proteing shake with some… it solidifies at cooler temps, so even using the blender I ended up with a floating fatty mass on the top of my shake
However, to cook with it’s brilliant! The coconut flavour isn’t as strong as you might think, but adds an interesting angle to anything spicy by carrying the flavours beautifully

If you get the virgin coconut creme, it does have a definite coconut scent and a slight taste. If you get regular processed coconut oil, it shouldn’t smell like anything…if it does, it’s gone off. I do a sort of "caribean style" chicken with coconut oil.

I do a sort of "caribean style" chicken with coconut oil. You will have to figure out that the calories/carbs in this because I make it for my BF who eats more carbs than I do:) What I do is chop ginger (very finely) & mangos (approx 1" cubes) & set them aside. I rub the (washed and dried) chicken around on the cutting board to pick up the mango/ginger juice left on the board to help the spices stick. Lightly coat the the chicken with ground cloves & allspice. Sautee the chicken in the coconut oil until it is almost fininshed and then drizzle a little Jamaican Pickapeppa sauce on the chicken for the last couple of minutes of cooking. Take the chicken out of the pan & add the mango and ginger and a shot or so of coconut rum to deglaze the pan. Add a little more of the pickapeppa sauce and cook for a couple of minutes until the mango is soft & the alcohol has cooked out. Serve the chicken over top of the mango sauce with a green salad. A whole mango has about 30ish carbs so if you make this as 4 servings, it should be about 8 grams of carb from the mango, maybe 1 from the pickapeppa, 1 from the rum? Maybe Bob or someone can turn this into a "real recipe"?
